January Dragon Chat: Whole Steamed Fish for Chinese New Year

Bring abundance and good luck with the whole fish

Chinese New Year is the biggest holiday for the Mandarin Immersion community! With the wonderful amount of diversity we have within our community, our families celebrate the New Year in many different ways. On Friday, January 22 at 5 pm, Teresa Lo will share with us one of the most iconic New Year dishes - steamed whole fish. Not only will we learn how to prepare the fish, but also the symbolism behind it. Teresa will treat us to a cooking demo and you can also follow along to practice! Your ingredient list is below so you can prepare ahead of time. We hope you will join our demonstration and conversation around your celebrations, traditions and favorite dishes.

Whole Steamed Fish Ingredients:

  • 1 bunch scallions

  • 2-3 inch piece of ginger

  • ginger

  • 1 small bunch cilantro

  • 1/4 cup soy sauce

  • 1/2 teaspoon salt

  • 1/2 teaspoon sugar

  • 1/4 cup hot water

  • 1 2-3 lbs whole white fish (such as sea bass, grey sole, flounder, fluke, tilapia, or haddock)

  • 2 tablespoons vegetable oil

Equipment:

  • Wide pan with lid or Wok with lid

  • Metal steamer rack or a small heatproof bowl

  • Heatproof dish large enough to fit fish but small enough to fit inside pan/wok. With some depth so liquids catch.
